Ogbono Soup and Beed

Ogbono soup is a popular and flavorful Nigerian dish that is made with ground ogbono seeds, palm oil, and a variety of meats and vegetables. It is a thick and hearty soup that is perfect for a cold day.

Here is a recipe for ogbono soup:

Ingredients:

  • 1 cup ground ogbono seeds
  • 1 pound beef, cut into pieces
  • 1/2 pound smoked fish, washed and deboned
  • 1/4 pound dried fish, washed and deboned
  • 1 cup palm oil
  • 1 tablespoon ground crayfish
  • 1 teaspoon ground pepper
  • 1/2 teaspoon salt
  • 1 onion, chopped
  • 1 tablespoon locust beans (iru), optional  
  • 1 cup chopped spinach or other leafy greens
  • Water

Instructions:

  1. Wash and season the beef with salt and pepper. Boil the beef until it is tender.
  2. Wash and debone the smoked fish and dried fish.
  3. Heat the palm oil in a pot over medium heat. Add the ground ogbono seeds and stir until the oil is absorbed.
  4. Add the beef stock, smoked fish, dried fish, ground crayfish, ground pepper, salt, onion, and locust beans (if using). Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add the chopped spinach or other leafy greens and cook for 5 minutes more.
  7. Serve hot with fufu, pounded yam, or eba.  

Tips:

  • You can use a food processor to grind the ogbono seeds.
  • If the soup is too thick, add more water.  
  • You can add other vegetables to the soup, such as tomatoes, onions, and peppers.
  • You can also add a pinch of potash to the soup to enhance the flavor.
